I love the soy sauce-based glaze on this – it goes so well with the creamy texture of the avocado and the crunch of the cucumber keeps it all very fresh!

This is a simple skillet chicken dinner that can be made bigger or smaller depending on how many people you are serving. This dish has a bit of a mediterranean flair given the spices and herbs which keeps the flavor profile unique but approachable.

These pork tenderloins are my go-to staple for a simple, clean family meal. My approach for a dinner night like this is SUBSTITUTE SUBSTITUTE SUBSTITUTE! Don’t want broccoli? Use whatever vegetable you have.

Chicken quesadillas are such a simple, feel good meal. Top that off with being super easy to serve, and we’ve got a pretty classic go-to weeknight meal served up and ready to go. This is also a great way to use the rest of your chicken pack!

This lemon tortellini is great any time of the year because the creamy sauce is warm enough for winter while the lemon and spinach lightens the dish up enough for a spring or summer meal as well.
