  • 1.5 lbs cooked chicken, shredded

  • Shredded cheese (mexican-style)
  • 1 green or red bell pepper
  • 1/2 cup onion
  • olive oil

Recipe: Easy Chicken Quesadillas

  1. Chop bell pepper and onions. Heat in a pan with olive oil, salt, and pepper. Remove from heat.
  2. Lay one tortilla on a flat surface. Layer shredded cheese, peppers and onions, cooked chicken, and additional cheese. Stack another tortilla on top. 
  3. Heat for 4-5 minutes on a griddle pan, flipping halfway through total cook time. 
  4. Slice into quarters and enjoy with salsa! 

Family Tips

  • Quesadillas are a great option for lunch or dinner – you can pretty much throw in whatever you have with some melty cheese and it will be delicious!
  • If you’ve got a super picky eater, just use one shell (cut in half) with just cheese to make a mini cheese quesadilla. You can even have your toddler help to spread the cheese.
  • You can batch-bake chicken at the start of the week so you aren’t stuck cooking and shredding chicken when you are pulling together quesadillas quickly. You can even purchase a whole-roasted chicken from your grocery store if you prefer.
  • Want it spicy? Amp up the flavor in the peppers and onions with cayenne, chili powder, or even marinating the chicken in a spicy salsa before cooking.
