Easy, flavor-bomb fish at home? Say more! I used to be really intimidated to cook any type of fish at home, but salmon fillets have found a spot in some of my favorite dishes. I love the soy sauce-based glaze on this – it goes so well with the creamy texture of the avocado and the crunch of the cucumber keeps it all very fresh!

- 4 6-oz skinless salmon fillets
2 cups cooked white rice or one 8.8-oz packaged cooked white rice
- 3 tablespoons low sodium soy sauce (+ extra for serving)
- 2 tablespoons apple cider vinegar
1 tablespoon honey
- 1 tablespoon brown spicy mustard
2 avocados
- 1 large cucumber
- Sriracha mayo for serving (assume ~1 tablespoon per person)

Recipe: Salmon and Cucumber Rice Bowls
- Begin cooking the 2 cups of white rice so this is complete by the time you are through with the rest of the meal. If you do not have an air fryer, heat the oven to 425°.
- In a small bowl, mix together the soy sauce, apple cider vinegar, honey, and mustard. Pat the salmon fillets with a paper towel to ensure they are dry and then brush on the glaze to cover.
- If you have an air fryer, follow instructions to air fry the salmon (likely 10-15 minutes). If not, with the oven at 425°bake the salmon for 10-12 minutes until just cooked through.
- While salmon and rice cook, slice the cucumber into rounds and avocado into slices. When salmon is complete, use a fork to flake it into chunks.
- To serve, layer rice, salmon, cucumber and avocado chunks, include additional soy sauce on the salmon as desired and drizzle the whole bowl with sriracha mayo. Enjoy!

- If you don’t eat fish you can swap the salmon for chicken. Follow the same glaze instructions and cook according to air fryer directors for chicken breast OR bake the chicken at 400° for ~25 minutes depending on thickness.
- If you don’t yet have an air fryer, I do recommend getting one! You don’t need to spring for a giant one with a million fancy functions – something simple and basic will do the trick and save you time. It opens up the door for some quicker meals and even if you use it 1-2x per week it is worth it.
