Substitutions? – You can easily swap out the broccoli for any other vegetable you prefer or have on hand. I love green beans in this dish as the pineapple glaze and soy sauce really sticks to it but cauliflower or carrots and corn work really great as well. You can even double or triple up on veggies and remove the chicken if you want to serve a vegetarian meal!
Ingredients List
- 1 lb broccoli florets
2 cups pineapple (about half of a whole pineapple)
1.5 lb chicken breast
2 cloves garlic
1/4 cup soy sauce
4 tablespoons olive oil
1 tablespoon chili garlic sauce
1 tablespoon chili sriracha
1 tsp cornstarch
salt
pepper
2 cups cooked white rice or one 8.8-oz packaged cooked white rice
Recipe: Pineapple chicken with broccoli and white rice
- Begin cooking the 2 cups of white rice so this is complete by the time you are through with the rest of the meal.
- Cube the chicken, broccoli, and pineapple into bite-size pieces (ensure separation to avoid contamination with the chicken).
- Heat 2 tablespoons olive oil in a large pan. Season the chicken with salt and pepper, and sauté for 4-5 minute ensuring it is cooked through on all sides. Remove to a side plate and lightly tent to keep warm.
- To the same pan, add the broccoli and cook undisturbed for 3 minutes to get a nice sear. Add just enough water to coat the bottom of the pan, cover, and steam the broccoli for 3-5 minutes until bright green and tender. Remove from pan and dump any remaining water.
- For the sauce, add pan back to the heat with garlic and 2 tablespoons olive oil. When the garlic is lightly browning, add in the soy sauce, chili garlic sauce and chili sriracha, plus additional salt and pepper to taste. If the sauce is too runny, add a dash of corn starch to thicken.
- Stir in the chicken, broccoli and pineapple to coat. Serve hot over white rice and enjoy!

- I tend to serve all the element separately and sometimes without the sauce for kiddos but more adventurous eaters might love the flavor
- Spice level adjustments – up the level of chili garlic sauce and chili sriracha if you want it spicier!
