This deconstructed chicken pot pie has a delicious, hearty filling just like you remember your mom making – because this recipe was actually my GRANDMA’S! You will love it, I promise. I made some minor adjustments including making this the pot pie “deconstructed” to save you time during the week and also make it reusable for leftovers without getting soggy. Enjoy!

Ingredients List

  • 2.5 cups cooked chicken (I tend to get a whole rotisserie style at the store to save time)
  • 3 russet (or similar) potatoes, peeled and cooked
  • 1 chicken bouillon cube
  • 6 tablespoons butter

  • 6 tablespoons flour
  • 2 cups chicken broth
  • 1 can peas and carrots mixture
  • 1 cup milk
  • 1 can “ready-to-bake” biscuits (e.g., Pillsbury Grand or Buttermilk style)

Recipe: Chicken Pot Pie (Deconstructed)

  1. Melt butter in a large and heavy pot. Stir in flour and pepper, and cook until bubbly.
  2. Gradually add chicken broth, milk, and bouilleon cube. Stir until thickened.
  3. Add chicken, carrots, peas and potatoes. Stir and heat over low for about 5 minutes.
  4. Add mixture to a casserole dish and bake for 25 minutes at 350ยฐ
  5. Top with cooked biscuits (add after cooking pot pie insides to ensure the biscuits don’t get soggy)

Family Tips

  • Make sure you factor in time to peel, chop, and boil the potatoes. This can be tedious but you can try to get it done either earlier in the week or just know it will take some additional time when beginning to cook.
  • You can freeze the pot pie! When thawing you can run the container under some hot water to separate, or let stand for a few minutes til the leftovers slide out. In a large hot saucepan, allow the pot pie mixture to melt – plan to add up to an additional 1/2 cup of chicken broth to ensure it is not too thick after sitting.
