Chicken Corn Chowder

I have tried alllllll the cozy soup recipes, and after many very mediocre chowders, and thin, brothy soups, I really can say i am obsessed with this one. It is warm… it is hearty…and it is flavorful! Best of all, it can be ready in 30-40 minutes, which makes it totally possible to whip up during the week. This recipe will also make a large amount (hello leftovers) so you can leverage it for lunch or freeze for later enjoyment!

Ingredients List

  • 1.5 cups cooked chicken
  • 3 tablespoons olive oil
  • 1 tablespoon butter
  • 1 large onion, diced
  • 3 or 4 red potatoes, cubed in 1/2 inch pieces
  • 1 red or green pepper (or half each!)
  • 4 tablespoons flour
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 teaspoon cayenne 
  • 1/2 teaspoon thyme
  • 1/2 teaspoon sage
  • 1 14.5 oz can cream style corn
  • 1/2 cup frozen corn or canned corn (drained)
  • 1/2 cup heavy cream

Recipe: Chicken Corn Chowder

  1. In a large pot or Dutch Oven heat the olive oil and butter. Sauté the chopped onion, bell pepper, and potatoes for 5 minutes until lightly browned. Add garlic.
  2. Stir in the flour, broth, and seasoning (salt, pepper, cayenne, thyme, sage). Bring to a boil and quickly reduce heat to a simmer once bubbles start. Cover and cook over low heat until potatoes are tender (about 10-12 minutes)
  3. Stir in the cream style corn, chunks of chicken, regular corn, and heavy cream. Cook on low for 5 minutes until hot and heated throughout (note, do not allow to boil). If the chowder is not the desired consistency you can add additional broth to thin or flour to thicken.
  4. Enjoy!!

Family Tips

  • I find this recipe versatile because you can use whatever chicken you prefer (thighs, breasts, pre-cooked full rotisserie style from the store – whatever!)
  • Young hands will enjoy helping to chop up the peppers while you prepare the potatoes and organize the seasonings!
  • If you don’t like the spice, you can omit the cayenne (or double down if you love a kick!)
