Roast beef during a busy week is absolutely a little crazy, I can own that. But, I have and always will adore a homey roast beef dinner with a nice, thick gravy. The truth is yes – it takes a long time time to cook, but it really isn’t too hands on! So, it certainly isn’t something I make every week but it is a good pick-me-up and guaranteed to make you feel happy to your core! If it truly isn’t for you or you don’t have the time just swap out the roast beef for any other protein of your choice.

Ingredients List
- 2.5- 3 lb roast eye round or seamed eye round beef
- 1 box Wild Mushroom ad Herb rice pilaf (e.g., Near East)
- 1 bunch of asparagus, ends trimmed, chopped into 1-1.5 inch pieces
- 1.5 cups mushrooms, washed and chopped
- 1 cup frozen peas
- 1 pack Brown Gravy (e.g., Mccormick)
- salt and pepper to taste
- 3 tablespoons olive oil
Recipe: Roast Beef, Mushroom Rice, and Vegetables
- Heat oven to 450°. Prepare a foil lined pan and place the roast beef in the pan. Season all sides with salt and pepper. Bake for 10 minutes at 450° then drop the temperature to 325°, and bake for 30-35 minutes per pound. The Roast Beef is ready once it reaches an internal temperature of 140-145°.
- Start the rice and cook per the directions when there is about 30 minutes left on the roast beef.
- While the Roast Beef is resting (about 10 minutes), start the gravy and vegetables. You will just need water and a small sauce pan for the gravy – follow the directions on the packet.
- For the vegetables, heat a medium-sized saucepan over medium heat with 3 tablespoons of olive oil. Once hot, drop in the asparagus, peas and mushrooms with some salt and pepper. Stir and cook for ~5-10 minutes until desired consistency (I like when the mushrooms are golden brown and the asparagus has still got a little crisp on it).

Family Tips
- Kids will either love or hate the gravy – I recommend serving on the side and allow everyone to serve themselves as they please across the vegetables, rice, and gravy!
- If you have extra roast beef but no extra rice or vegetables, sometimes a simple pasta with some light butter and parmesan is an excellent side for a little lunch!
