I think my family would eat chicken alfredo every single night if I served it (and let’s face it… I could happily eat it every night too!). This is a super easy recipe that can easily be made bigger or smaller depending on the crowd but will alway deliver the creamy goodness you expect.ย

๐ŸŒฑ Substitutions? – You can easily omit the chicken and/or add peas. I tend to add peas because I LOVE them and they give some color to this dish but totally up to you! Sometimes, I even add some mushrooms.

  • 1 box pasta (1 lb)
  • 2 tablespoons olive oil
  • 1/2 cup heavy cream

  • 1/2 stick salted butter
  • 1/2 cup grated parmesan
  • salt and pepper to taste

  • 1 lb thinly pounded boneless chicken breast

Recipe: Pasta with Chicken Alfredo

  1. Start a pot of water boiling and cook pasta as directed.
  2. While the water is boiling/pasta is cooking, heat olive oil in a pan. Season chicken with salt and pepper and add to hot pan. Cook for ~3-5 minutes per side until lightly browned and cooked through. Put to the side and clean pan.
  3. In the same pan, turn stovetop to low heat, and add the butter (be careful not to let it brown). Once mostly melted, add the heavy cream and cheese and stir pretty constantly until thickened and lightly bubbling.
  4. Conserve a quarter cup of pasta water. Add pasta to your cream sauce over heat and toss to incorporate.ย 
  5. Add salt and pepper to taste, and reserved pasta water as needed to thicken or thin to desired texture.
  6. Dice chicken and add to the pot.
  7. Sprinkle cheese on top and enjoy!

Family Tips

  • If you want to add peas or mushrooms, just either cook them in the chicken pan (mushrooms) or add frozen peas directly to the boiling pasta about 2 minutes before it is done cooking
  • If you want to make this for a larger group you can easily double the ingredients (e.g., 1 stick butter, 1 cup heavy cream and 1 cup cheese!)
