This is a classic weeknight meal, but dressed up. If it is winter you can keep to the stove but if it is summer feel free to head out and grill up that london broil! as always for one of these weeknight staples, feel free to substitute whatever protein your family prefers, or whatever rice etc.

Ingredients List
- ~1.5 lb london broil
- 1 box rice pilaf (e.g., Near East)
- 12 oz Green Beans (ends trimmed)
- 2 tablespoons butter
- 1 clove garlic, minced
- 1/2 cup chopped walnuts
- 2 tablespoons olive oil
- steak seasoning (or your preference)

Recipe: London broil, Walnut Green Beans, and Rice
- Toast your walnuts in a large pan over low heat until lightly brown, ~3-4 minutes. Remove from heat and set aside.
- Season your beef with steak seasoning, salt, pepper or other flavoring of your choice. Start the water for the rice, and follow box instructions as directed (from start to finish about 25 minutes).
- Lightly spoon olive oil over the beef while grill pan is heating up to medium/high. Once hot, add the london broil to the grill pan. Cook for ~10 minutes, then flip, and cook for another ~8-10. Beef is ready when internal temperature hits ~145° for medium.
- In the same pan that the nuts were toasted, add 2 tablespoons butter and let lightly brown. Once melted, add the green beans, garlic, salt, and pepper and toss to coat. Cook on medium for ~5-7 minutes. then, turn heat to low and let simmer until rice and meat are ready. Add the walnuts back to the green beans and serve all together.
Family Tips
- You can swap out asparagus for the green beans easily; other vegetables would also work but you will need to blanch something like broccoli for 3-5 minutes first otherwise it will be too crispy!
- You can adjust the cook time of your london broil if you have a particularly thick or thin piece of meat. If you have any leftover you can always toss it in a salad for lunch!
