I love soups that are thick enough to borderline be a pasta dish however the beauty of this one is that you can add or decrease the amount of pasta to get your own desired consistency. The sausage is just warmly spiced enough to add some flavor but mellow enough that this does not qualify as a spicy dinner. You can also omit the sausage or swap or ground turkey if you prefer!

Ingredients List
- 1 lb ground sweet Italian sausage
2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 14.5 oz can italian style diced tomatoes, drained
- 1 cup heavy cream
- 1.5 cups small pasta (such as ditalini, small shells, or elbows)
1 teaspoon salt
- 1 teaspoon pepper
- 1/2 teaspoon oregano
- 1/2 teaspoon thyme
- 1/2 teaspoon paprika
- 1/2 cup parmesan cheese (grated)
- 1/2 teaspoon parsley (optional)

Recipe: Creamy Parmesan Sausage Soup
- In a large pot or Dutch oven, heat the olive oil, add the sausage and break up into small pieces. Cook until browned. Remove and set aside in a small bowl.
- In the same pot (no need to drain), add the onion and cook for 3-4 minutes until translucent. Add the garlic and cook for another minute.
- Add the chicken broth and diced tomatoes. Bring to a simmer and add your seasoning (salt, pepper, oregano, thyme, paprika, and parsley).
- Add pasta and cook for ~8-10 minutes as pasta directs until tender.ย
- Reduce heat to low, and add the heavy cream. Add back in the sausage and simmer for 5 minutes.ย
- Remove from heat and stir in the parmesan. Feel free to add more cheese when serving!
Family Tips
- If you don’t want to use sausage you can easily substitute ground turkey instead.
- While this recipe works great with 1.5 cups of pasta, in my house we tend to add almost a whole box (12-16 oz) of pasta. This creates something more similar to a regular pasta dish if you don’t add some additional broth however for families with young kinds it might be a little bit more approachable than a full on “soup” dinner.
- This will freeze great if you have leftovers you don’t manage to finish for lunch! when re-heating, just be sure you have 1/2 cup extra chicken broth on hand to thin it out as needed.
